Ingredients
1 pound Ground Beef
16 oz. Velveeta, cubed
4 oz. Monterrey Jack Cheese, freshly shredded
14 1/2 oz. Canned Diced Tomatoes with Green Chiles
1 Tablespoon Olive Oil
Salt, to taste
Black Pepper, to taste
1/2 Teaspoon Chili Powder
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/2 Teaspoon Paprika
Chopped Tomatoes, for garnish
Cilantro, for garnish
Directions
- Heat olive oil in a large skillet or saucepan, over medium heat.
- Add in your beef and break it apart with a wooden spoon or meat masher.
- Mix in chili powder, garlic powder, onion powder, and paprika, and cook until no longer pink.
- Add in the tomatoes (juices) Velveeta, and Monterey Jack.
- Reduce the heat to low and cook, stirring occasionally, for about 5-10 minutes, or until the cheese is fully melted.
- Top with extra tomatoes and cilantro, and serve with tortilla chips.
- Enjoy!
